United Nations Salad

Can you see the  potatoes? You can't, because I mashed them. Voila! Beans + mash + pumpkin = United Nations salad. Eat with anything.

1. 
Soak white beans overnight, cook the following day.

2. Or, soak beans for a few hours then cook till they are soft.

3. Steam potatoes.

4. Leave to cool.

5. Steam pumpkin.

6. Leave to cool.

7. Add a little margarine to potatoes and mash them with a fork.

8. Mix with beans and pumpkin.

9. Eat like that.

10. Eat with roast chicken, steak or grilled meat.

Please note: You can mash potatoes with those electrical gadgets on your kitchen counter, but a lot is wasted because food clings to the sides, or between blades. It’s up to you.
