The Carrot Story
Sometimes it’s hard to resist bulk vegetables when the price is right. Oranges are easier because it’s freshly squeezed orange juice galore. All that pulp!
Carrots are a different story. It’s not possible to cook them all, in one go. We forget them and they end up in the basement of the fridge, angry and emaciated, quite scary if you ask me.
Save The Carrots
1. Get different sizes of freezer bags.
2. Wash and cut carrots. I prefer using a knife, not a machine.
3. Cut into different sizes. Little ones to throw in salads and medium ones for stews and curries.
4. Cut some carrots into long sticks to take to work as snacks, or car snack for long distance driving.
5. Do you make your own carrot muffins or carrot cake? Grate a bag or two and freeze.
6. Steam diced carrots for 4 minutes.
7. Boil them for 4 minutes if you don’t have a steamer, but keep carrot juice for smoothies and soups.
8. Steaming or boiling them longer kills the crunchy, crunchy.
9. Remove from stove and cool.
10. Place sizes in different bags and freeze.
